Stone Fruit Panzanella
peaches, plums, cherries, sungolds, sesame and olive bread croutons
There is nothing I love more than a panzanella salad in the summer. It’s refreshing, filling, and oh-so-satisfying. This version swaps the usual tomatoes for a selections of stone fruit — cherries, plums, and peaches — alongside some super sweet Sungold tomatoes. It all gets tossed with crunchy olive bread croutons, a handful of fresh basil, and lots of roasted sesame seeds. It’s a slightly unexpected twist on a classic, and it is incredibly delicious.
