These hummus bowls with spiced ground beef are one of those back-pocket dinners I make over and over again. It starts with a base of creamy tahini hummus, then topped with spiced ground beef seasoned with cumin, paprika, and cinnamon, then finished with a tender herb salad tossed with pickled red onions. Add torn olives, a dusting of sumac and cumin, and serve it all with warm pita or homemade pita chips, and you’ve got a very solid hummus dinner bowl situation.
One of the best things about a hummus bowl? You can top it with pretty much anything you like. This version is a favorite around here, but they’re also great with grilled chicken, roasted or grilled veggies, stewed chickpeas, or even topped with a chopped cucumber and tomato salad. You can totally customize it however you like.

Ingredients
Hummus - You’ll use about half the recipe
The Spiced Ground Beef:
1 lb Ground Beef
1 Shallot finely diced
1/4 tsp Cumin
1 tsp Paprika
1/2 Cinnamon
Salt
Olive oil
For The Herb Salad:
Cilantro
Parsley
Dill
Quick pickled red onions or sliced shallot or red onion
Lemon juice
Olive Oil
To Serve:
Olive Oil
Sumac
Ground Cumin
Flaky Salt
Olives pitted and torn in half
Pita Chips or warm pita bread
Instructions
Cook The Spiced Ground Beef:
Heat a drizzle of olive oil in a skillet over medium-high heat. Add the ground beef and let it cook for 1–2 minutes, breaking it up. Add the diced shallot, cumin, paprika, cinnamon, and a generous pinch of salt. Cook until the beef is browned and crisp around the edges. Remove from heat and set aside.
Make Your Herb Salad:
In a bowl, toss your herbs with the quick pickled red onions, a squeeze of lemon juice, olive oil, salt, and pepper. Set aside.
Plate Up Your Hummus Bowl:
Spoon a generous amount of hummus into a shallow bowl. Top with the warm spiced beef, herb salad, and torn olives. Season with ground cumin, sumac, and flaky salt. Finish with a drizzle of olive oil.
Serve with homemade pita chips or warm pita on the side.
